Flake ice: essential for fish as soon as they come out of the water

Ice is essential at every stage from capture to the processing of the fish, for example:

  • to anaesthetise farmed fish with a cold shock (blend of water/flake ice) before slaughter, in order to limit the conditions of stress and their influence on the characteristics on the flesh,
  • to maintain the fresh condition of the fish during sorting, transport and sale,
  • to control its temperature during its rigor mortis phase before fileting
